No Bake Chocolate Cookies

Ingredients:
  • 1/2 cup unsalted butter, room temperature (cut into small pieces)
  • 4 ounces semi-sweet or bittersweet chocolate, chopped or in chips
  • 4 ounces graham crackers or butter cookies
  • 1 1/4 cups (6 ounces) nuts of your choice toasted and chopped.
Tip to toast nuts: If using almonds, walnuts, pecans, and/or macadamia nuts: In a 350F oven bake the nuts for about 8 - 10 minutes or until lightly brown and fragrant. Let cool then chop coarsely.

Directions:

  1. Create a double boiler by putting about 2 inches of water into a medium sized sauce pan and bring to a simmer. Put a heatproof bowl over the sauce pan so it fits nicely in the pan, but not touching the water.
  2. Melt the butter and chocolate in the bowl stirring often.
  3. Break the graham crackers or cookies into small pieces about ½ inch or so, not too small, not too big.
  4. Remove the melted chocolate from the heat and add the cookies and nuts to the bowl. Stir well.
  5. Spread the mixture into an 8 inch baking dish, cover and refrigerate over night. Cut into about 24 bars.
