No Bake Chocolate Cookies
Ingredients:- 1/2 cup unsalted butter, room temperature (cut into small pieces)
- 4 ounces semi-sweet or bittersweet chocolate, chopped or in chips
- 4 ounces graham crackers or butter cookies
- 1 1/4 cups (6 ounces) nuts of your choice toasted and chopped.
Directions:
- Create a double boiler by putting about 2 inches of water into a medium sized sauce pan and bring to a simmer. Put a heatproof bowl over the sauce pan so it fits nicely in the pan, but not touching the water.
- Melt the butter and chocolate in the bowl stirring often.
- Break the graham crackers or cookies into small pieces about ½ inch or so, not too small, not too big.
- Remove the melted chocolate from the heat and add the cookies and nuts to the bowl. Stir well.
- Spread the mixture into an 8 inch baking dish, cover and refrigerate over night. Cut into about 24 bars.
