Extra Large Multi Chocolate Chunk Chew Cherry Cookies

Makes 24-30 cookies, really big ones.

Ingredients:
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cups Semi sweet chocolate chips
  • ½ cup milk chocolate chips
  • ½ cup white chocolate chips
  • ½ cup dried cherries, chopped
  • ½ cup chopped walnuts, optional
Directions:
  1. Preheat oven to 375° F.
  2. Combine flour, baking soda and salt in small bowl and whisk together.
  3. In the bowl of a standing mixer or in a large bowl using a hand mixer, beat butter, granulated sugar, brown sugar and vanilla extract until creamy.
  4. Add eggs, one at a time, beating well after each addition.
  5. Slowly beat in flour mixture.
  6. Stir in chips, fruit and nuts.
  7. Using an ice cream scoop portion out the dough and place 3 inches apart on a ungreased baking sheets.
  8. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for about 2 minutes; remove to wire racks to cool completely.
Tip: Only bake off the number of cookies you will use at one sitting. Put the rest of the dough in the refrigerator for about an hour, then remove from the bowl and form into a log about 2 ½ - 3 inches thick. Wrap in plastic wrap and freeze. When ready for more cookies, slice off rounds of cookie dough about ½ inch thick and bake as above.
