Mashed Potatoes with Sour Cream and Chives

Ingredients:

  • 2 small-medium potatoes per person at your table; for 22 people I am looking at about 5 lbs of potatoes. Leaving the skins on, wash and cut them into equal sized pieces about 1 inch or so big. This way they will all cook at the same speed.
  • 1 stick of butter cut into cubes
  • 1 cup of milk or combination of milk and stock.
  • 1 cup sour cream
  • ½ cup chopped fresh chives or 1/4 cup of Spice Hunter dried chopped chives
  • 2 cloves of garlic minced
  • Salt and ground pepper to taste

Directions:

  1. In a large pot with salted water, cook the potatoes until they are very tender.
  2. In a medium sauce pan, melt the butter then add the milk, sour cream, chives and garlic and heat through, but do not boil or scold.
  3. When the potatoes are done, drain and return to the hot pot and add 2/3's of the milk and butter mixture. Using an old fashioned masher mash the potatoes and combine them well with the liquid. Add the remaining liquid as needed to get the consistency you want. If you want a smoother, whipped potato consistency, use a standing mixer with a paddle fitting and combine the potatoes and liquid starting on slow and increasing the speed to whip them.
  4. Season with salt and pepper to taste. Serve hot!
