Crystallized Ginger Ice Cream

Notes/Suggestions: This is a no cook ice cream recipe, super easy. I use my Cuisinart Ice Cream/Yogurt Maker for the job. Makes ten ½ cup servings.

Ingredients:

  • 2 cups heavy cream, really cold
  • 1 cup whole milk, really cold
  • ¾ cup baker’s sugar (regular granulated sugar will be fine too.
  • 1 tsp of good quality vanilla extract (Spice Hunter)
  • ½ cup crystallized ginger, chopped

Directions:

  1. Put the cream, milk, sugar and vanilla in a blender and whirl for a minute or two until the sugar is dissolved.
  2. Put the mixture into the ice cream maker and turn on.
  3. Mix in the ice cream maker for about 20 minutes them add the ginger. Let the ice cream churn for 5-10 minutes more.
  4. If you like soft serve, you can eat it right away, or put into an air tight container and freeze for 2 or more hours.
