Cranberry-Orange Chuntey
Notes/Suggestions: Some years the cranberries are more tart than others. Adjust the sugar or honey to taste. Also a pinch or two of salt can bring out the sweetness. Experiment a bit.
Ingredients:
- One bag of fresh cranberries rinsed and yucky ones discarded
- 2 large navel oranges
- 2 star anise
- ½ cup sugar or honey
Directions:
- Zest the two oranges. Squeeze the juice out of both oranges.
- Put the cranberries, OJ juice and zest, star anise and sugar in a sauce pan set on low and cover. Let cool slowly until the cranberries start to pop.
- Uncover and continue to cook until the liquid in the pan has reduced by half.
- Let cool and store in the refrigerator for up to two weeks.
