Cranberry-Orange Chuntey

Notes/Suggestions:  Some years the cranberries are more tart than others.  Adjust the sugar or honey to taste.  Also a pinch or two of salt can bring out the sweetness.  Experiment a bit.

Ingredients:

  • One bag of fresh cranberries rinsed and yucky ones discarded
  • 2 large navel oranges
  • 2 star anise
  • ½ cup sugar or honey

Directions:

  1. Zest the two oranges. Squeeze the juice out of both oranges.
  2. Put the cranberries, OJ juice and zest, star anise and sugar in a sauce pan set on low and cover. Let cool slowly until the cranberries start to pop.
  3. Uncover and continue to cook until the liquid in the pan has reduced by half.
  4. Let cool and store in the refrigerator for up to two weeks.
