Corn Bread Pudding

Note/Suggestion: You can make this dish without the chili peppers and/or cheese, or substitute flavors that will match you menu: cooked sausage, roasted red peppers, dried fruit, goat cheese, etc. The combinations are only limited by your imagination.  This recipe will make 8-12 side dishes.

Ingredients:

  • 1 15.25 oz can whole kernel corn
  • 1 15 oz can cream-style corn
  • 1 8 oz container sour cream
  • 1 8.5 oz package dry corn muffin mix
  • 1 4oz. can of roasted chili peppers, chopped or diced (optional)
  • ½ cup shredded cheddar cheese (optional)
  • salt and pepper to taste

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a 9x13 inch casserole dish.
  3. In a bowl, combine the all the ingredients and season to taste with salt and pepper.
  4. Bake for 90 minutes or until a toothpick comes out clean.
  5. Serve Hot!
