Corn Bread Pudding
Note/Suggestion: You can make this dish without the chili peppers and/or cheese, or substitute flavors that will match you menu: cooked sausage, roasted red peppers, dried fruit, goat cheese, etc. The combinations are only limited by your imagination. This recipe will make 8-12 side dishes.Ingredients:
- 1 15.25 oz can whole kernel corn
- 1 15 oz can cream-style corn
- 1 8 oz container sour cream
- 1 8.5 oz package dry corn muffin mix
- 1 4oz. can of roasted chili peppers, chopped or diced (optional)
- ½ cup shredded cheddar cheese (optional)
- salt and pepper to taste
Directions:
- Preheat oven to 350 degrees.
- Grease a 9x13 inch casserole dish.
- In a bowl, combine the all the ingredients and season to taste with salt and pepper.
- Bake for 90 minutes or until a toothpick comes out clean.
- Serve Hot!
