Butternut Squash
This is my favorite holiday recipe (by 'holiday' I mean 'fall').Ingredients:
- One butternut squash, cubed and sworn at
- More butter than you think you need, melted
- An onion, thinly sliced
- More butter
- Pine nuts
- The good feta
Directions:
- Toss squash in melted butter. Bake at 450 for 45 minutes or until you can skewer the squash without trying to hard.
- Meanwhile, pan-fry onions and butter on low until onions are carmalized. Eat a few.
- Toast pine nuts in toaster oven. Or just bung them in with the onions for the last 10 minutes or so. Or don't even bother, they'll be fine.
- When squash is done, throw it into a bowl and smother it with onions and pine nuts. Sprinkle with feta. Eat in one sitting.
