Butternut Squash

This is my favorite holiday recipe (by 'holiday' I mean 'fall').

Ingredients:

  • One butternut squash, cubed and sworn at
  • More butter than you think you need, melted
  • An onion, thinly sliced
  • More butter
  • Pine nuts
  • The good feta

Directions:

  1. Toss squash in melted butter. Bake at 450 for 45 minutes or until you can skewer the squash without trying to hard. 
  2. Meanwhile, pan-fry onions and butter on low until onions are carmalized. Eat a few.
  3. Toast pine nuts in toaster oven. Or just bung them in with the onions for the last 10 minutes or so. Or don't even bother, they'll be fine. 
  4. When squash is done, throw it into a bowl and smother it with onions and pine nuts. Sprinkle with feta. Eat in one sitting.
