Autumn Harvest Cornish Hens

Notes/Suggestions: Cornish hens are often over looked, but they make a great easy family meal or even meal for company. Depending on the size of the hen, plan on one per adult and one per two children.

Ingredients:

  • 2 Cornish game hens or squab
  • 1 medium onion, quartered
  • 2 apples, peeled, cored, thickly sliced
  • ½ cup pecans
  • ½ cup butter
  • 2 Tbsp. The Spice Hunter Poultry Grill and Broil
  • ¾ cup chicken broth

Directions:

  1. Preheat oven to 375°F. Rinse and dry birds.
  2. In Dutch oven, melt 4 Tbsp. butter. Add onions, apples and Poultry Grill and Broil. Cook covered until onions and apples are soft, about 6 minutes.
  3. Place mixture in a bowl and add pecans.
  4. Using ½ the mixture, stuff the hens and tie the legs closed.
  5. Melt the rest of the butter in a dutch oven. Brown the hens on all sides.
  6. Add the broth and remainder of the onion-apple mixture. Cover and bake in the oven for 30 minutes.
  7. Serve on a bed of sautéed spinach or beet greens and wild rice that has been cooked with dried mushrooms.
