Absolutely Fab Christmas Cookies

Notes/Suggestions: These cookies smell and taste of Christmas. This recipe doubles well so you can make extra dough and freeze it for another time. Makes about 30 2 inch cookies.

Ingredients:

  • ¾ cup butter
  • 1 ¼ cups sugar
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla
  • Zest from one lemon, optional
  • Pinch of salt
  • 2 ½ cups all purpose flour, sifted

Directions:

  1. Cream butter and sugar together until light and fluffy.
  2. Add the egg and egg yolk, vanilla, lemon zest (if using) and salt; stir to mix well.
  3. Add the flour and stir to mix well. Gather the dough into a ball and wrap in wax paper or plastic wrap and chill for at least 30 minutes.
  4. When ready to bake, pre heat the oven to 375 degrees. On a clean floured surface, roll out the dough to about ¼ inch thick. Stamp our cookie shapes and place on a cookie sheet lined with parchment paper or a baking mat.
  5. Bake for about 8 minutes or until just starting to turn golden. Do not over bake these. Let cool on a wire rack before decorating. You can use frosting, glaze, sprinkles, candies, etc to personalize your cookies.
