Absolutely Fab Christmas Cookies
Notes/Suggestions: These cookies smell and taste of Christmas. This recipe doubles well so you can make extra dough and freeze it for another time. Makes about 30 2 inch cookies.Ingredients:
- ¾ cup butter
- 1 ¼ cups sugar
- 1 egg
- 1 egg yolk
- 1 teaspoon vanilla
- Zest from one lemon, optional
- Pinch of salt
- 2 ½ cups all purpose flour, sifted
Directions:
- Cream butter and sugar together until light and fluffy.
- Add the egg and egg yolk, vanilla, lemon zest (if using) and salt; stir to mix well.
- Add the flour and stir to mix well. Gather the dough into a ball and wrap in wax paper or plastic wrap and chill for at least 30 minutes.
- When ready to bake, pre heat the oven to 375 degrees. On a clean floured surface, roll out the dough to about ¼ inch thick. Stamp our cookie shapes and place on a cookie sheet lined with parchment paper or a baking mat.
- Bake for about 8 minutes or until just starting to turn golden. Do not over bake these. Let cool on a wire rack before decorating. You can use frosting, glaze, sprinkles, candies, etc to personalize your cookies.
