Mexican Wedding Cookies

My children had this great pre-school teacher whose family was from Mexico. Every Christmas her mother would make these great cookies, but I was never given the secret family recipe. These are pretty good and not a secret.

Ingredients:

  • 1 Basic Cookie Dough Recipe
Additions:
  • Use light brown sugar instead of the granulated white sugar
  • Add 1 12/ cups of pecans, finely chopped
  • 2 cups of confectioners’ sugar for rolling
  • Mini muffin tin liners

Directions:

  1. Prepare the cookie dough with the light brown sugar and adding the pecans along with the flour. Mix well. There is no need to chill the dough for this recipe.
  2. Prepare your work station. You will need your bowl of cookie dough, a bowl of confectioners’ sugar and a prepared cookie sheet. Also have ready a platter and mini muffin tins for after baking.
  3. Pinch off a piece of dough about 1 tbsp big and roll into a ball. Roll into the confectioners’ sugar and place onto the cookie sheet. Repeat the process placing the cookies about 2 inches apart. Bake for 10 -15 minutes at 375.
  4. Cool the cookies for about 5 minutes so that you can handle them. Roll them in the confectioners’ sugar again and place into the mini muffin tins. Repeat the process with all the cookies.
