Kolaches

My husband’s grandmother emigrated from Czechoslovakia and he often talks about these great cookies of hers. This recipe would not be to her liking as it is not traditional; however it is easy to make with the kids and gives them the basic concept of the cookies. The fillings, often poppy seed, pineapple, apricot, cottage cheese and prune are prepared before baking. Almost any combination of fruit preserves and cheese with work. I use an assortment of apricot, peach, cherry and strawberry when making them.

Ingredients:

  • 1 Basic Cookie Recipe
  • 1 ½ cups of fruit preserves
  • 1 Basic Vanilla Frosting Recipe

Directions:

  1. After prepare the cookie dough, divide the dough into 10 even portions and flatten into a disc. Wrap the dough in plastic wrap and chill for about 2 or more hours.
  2. Put a disc of dough onto a clean, floured surface and roll out to an 8 inch circle. Use a pizza knife and cut the dough into 6 wedges.
  3. Place 1 tsp of fruit preserved on to the wide rounded edge of the wedge and roll it up into the dough. Place the cookie onto a prepared cookie sheet and slightly curve the roll-up into a crescent shape.
  4. Repeat this process with the rest of the dough and preserves. Bake the cookies for 15- 20 minutes at 375. Let cool completely before the next step.
  5. Make the basic vanilla frosting recipe and put into a re-sealable baggie. Snip a very small hole in one corner of the baggie and gently squeeze out the frosting in squiggly lines over the cookies.
