Hanukkah Gelt (Coins)

Ingredients:

  • 1 Basic Cookie Recipe
Additions:
  • 2 Tbsp unsweetened cocoa power
  • 1 cup of semi-sweet chocolate chips and 1 cup of blue candy melts (or 1 cup of white chocolate chips and a few drops of blue food coloring)

Directions:

  1. Make the cookie dough adding the cocoa powder with the flour and mix well so that it is well incorporated.
  2. Divide into 4 portions, wrap and chill for 2 hours.
  3. Roll out the dough onto a clean, lightly floured surface to a thickness of 1/8 inches. Using a small round cookie cutter (or various sized round cutters) cut out circle resembling coins.
  4. Put the “coins” onto a prepared cookie sheet spaced about 2 inches apart and bake for 10 -15 minutes at 375 degrees. Cool completely before the next step.
  5. In a small pot, melt the chocolate chips until creamy and smooth. Working quickly, dip half a cookie into the chocolate and lay down on a parchment lined cookie sheet to harden. Repeat the process until all the chocolate is used up.
  6. In another small pot melt the blue candies or the white chocolate chips and blue food coloring and repeat the process.
Tip: Put the cookie sheet into the freezer for an hour or so before you decorate the cookies. When you put the cookie dipped in melted chocolate onto the freezing cookie sheet it will harden VERY quickly.
