Hanukkah Gelt (Coins)
Ingredients:
- 1 Basic Cookie Recipe
- 2 Tbsp unsweetened cocoa power
- 1 cup of semi-sweet chocolate chips and 1 cup of blue candy melts (or 1 cup of white chocolate chips and a few drops of blue food coloring)
Directions:
- Make the cookie dough adding the cocoa powder with the flour and mix well so that it is well incorporated.
- Divide into 4 portions, wrap and chill for 2 hours.
- Roll out the dough onto a clean, lightly floured surface to a thickness of 1/8 inches. Using a small round cookie cutter (or various sized round cutters) cut out circle resembling coins.
- Put the “coins” onto a prepared cookie sheet spaced about 2 inches apart and bake for 10 -15 minutes at 375 degrees. Cool completely before the next step.
- In a small pot, melt the chocolate chips until creamy and smooth. Working quickly, dip half a cookie into the chocolate and lay down on a parchment lined cookie sheet to harden. Repeat the process until all the chocolate is used up.
- In another small pot melt the blue candies or the white chocolate chips and blue food coloring and repeat the process.
