Chinese Almond Cookies
Ingredients:
- 1 recipe of cookie recipe
- ½ teaspoon of almond extract
- 2 egg yolks beaten with 1 Tbsp of water.
- Blanched almonds
- Strawberry or raspberry jelly candies or fruit leather
Directions:
- Prepare the cookie recipe as usual and add the almond extract with the vanilla extract. There is no need to chill the cough before the next step.
- Break off a piece of dough about 1 tbsp big and using your hands form it into a ball. Place the dough onto the prepared cookie sheets and flatten slightly with the palm of your hand. Repeat this process with the entire mess of dough spacing the cookies about 2 ½ inches apart on the sheet.
- Brush the tops of the cookies with the egg yolk glaze and press almond or small jellied candies into the center. Bake for 10 – 15 minutes at 375.
