Chinese Almond Cookies

Ingredients:

  • 1 recipe of cookie recipe
Additions:
  • ½ teaspoon of almond extract
Glaze and Toppings:
  • 2 egg yolks beaten with 1 Tbsp of water.
  • Blanched almonds
  • Strawberry or raspberry jelly candies or fruit leather

Directions:

  1. Prepare the cookie recipe as usual and add the almond extract with the vanilla extract. There is no need to chill the cough before the next step.
  2. Break off a piece of dough about 1 tbsp big and using your hands form it into a ball. Place the dough onto the prepared cookie sheets and flatten slightly with the palm of your hand. Repeat this process with the entire mess of dough spacing the cookies about 2 ½ inches apart on the sheet.
  3. Brush the tops of the cookies with the egg yolk glaze and press almond or small jellied candies into the center. Bake for 10 – 15 minutes at 375.
