Dipping Sauce

Ginger Dipping Sauce

You can use this dipping sauce for all your dim sum choices. Add 2 Tbsp to a ½ cup of mayonnaise or yogurt to make a dip for fresh veggies.

Ingredients:
  • 1/2 cup light soy sauce
  • 1/4 cup red wine vinegar
  • 2 teaspoons ginger, minced or grated*
  • 2 tablespoons brown sugar
  • 2 scallions, chopped, white and light green parts only
Directions:
  • In a small bowl, combine the soy sauce, red wine vinegar and ginger.
  • In a small saucepan, melt the brown sugar on high heat, stirring constantly until it is just melted but not burnt. Add the soy sauce and red wine mixture and bring to the boil. The brown sugar will harden temporarily after the soy sauce mixture is added, but will then melt again.
  • Once the sugar is melted, add the scallions then remove from the heat and pour into a serving bowl.
*Wash the ginger, but leave the skin on. Use a plane zester/grater and grate the ginger.

Cilantro Dipping Sauce

Ingredients:
  • 1/2 cup plain yogurt
  • 1/2 cup mayo
  • 1/2 cup chopped cilantro
  • 1 clove garlic, grated or minced
  • 1Tbsp light soy sauce
Combine all ingredeints and mix well.  Serve with fresh vegetables.
