Tuna and Apple Melts
Notes/Suggestions: Omit the cheese and make a sandwich between two pieces of bread or serve with crackers on the side.Ingredients:
- ½ cup mayonnaise
- 2 Tbsp Dijon Mustard
- 1 tsp fresh lemon juice
- 2 large cans of tuna, drained (your choice)
- 1 small red apple, cored and finely chopped
- 2 stalk celery, finely chopped
- 2 scallions, finely chopped (white and light green parts only
- 6 slice of whole wheat or multi-grain bread (rye bread is good too, but not too many kids like it)
- 6 slices of medium cheddar, Swiss or gruyere cheese
Directions:
- In a small bowl, combine well, the mayo, mustard and lemon juice.
- In a medium bowl, using a fork, break apart the tuna into flakes. Add the apple, celery and onion and mix. Add the mayo mixture and fold in gently until well combined
- Lay the slices of bread onto a broiler pan. Equally divide the tuna mixture among the bread spreading it evenly. Place one piece of cheese on top of each combination and broil until cheese melts, about 2 minutes. Serve immediately.
