Salmon Salad
Note/Suggestions: Substitute the canned salmon for leftover salmon from dinner. Makes 2 sandwiches.Ingredients:
- 1 can of pink salmon (I like to use boneless and skinless)
- ¼ cup good quality mayonnaise
- 2 stalks of celery finely chopped
- 2 tbls sweet relish
- salt and pepper, to taste
Directions:
- Drain salmon and put into a medium sized mixing bowl. Break the salmon meet up with a fork to fine flakes. Mix in the mayonnaise, celery and sweet relish and combine well. Season with salt and ground black pepper to taste.
- Put half the mixture on to whole wheat bread or a soft multi grain roll or in a pita pocket. Add lettuce, sliced tomato or sliced red onion if you want. Delicious! Or serve with a side of multi grain crackers for kids to make mini sandwiched at lunch.
