Other Ways to Serve Eggs for Lunch
Confetti Egg Salad Sandwiches
Ingredients:
- 4 hard-cooked eggs, chopped
- 1/2 cup shredded carrots, about 2 carrots
- 1/2 cup chopped celery, about 2 celery stalks
- 1/4 cup chopped green onions with tops, about 2 scallions
- 1/4 cup creamy French dressing, reduce fat is okay.
- 3 slices tomato
- 6 thin slices cucumber
- 3 Lettuce leaves
- Sandwich bread, rolls or tortillas to make the sandwich/wrap
- In medium bowl, stir together eggs, carrots, celery, onions and dressing until well combined.
- To make the sandwiches/wraps, scoop one third of the egg mixture onto the bread, roll or wrap and top with a lettuce leaf, a slice of tomato and 2 slices of cucumber. Top with the other piece of bread or roll like a burrito.

Green Eggs and Ham
- 4 hard cooked eggs, chopped
- 2 Tbsp of Mayo
- 1 tsp of Dijon mustard
- 1 Tbsp dried dill
- Salt and pepper to taste
- 3 slices of uncured ham
Ole Egg Salad
- 4 hard cooked eggs, chopped
- 2 Tbsp of mayo
- 2 Tbsp of canned, roasted green chili peppers, finely chopped
- 2 Tbsp green onions, finely chopped (optional)
- 3 slices of tomato
- Shredded lettuce
- Slices of avocado
- 3 Tortilla wraps
Mediterranean Egg Salad
- 4 hard cooked eggs, chopped
- 2 Tbsp of mayo
- 1 heaping Tbsp of chopped olives (black or green, you choice)
- 1 heaping Tbsp each of finely chopped celery and cucumbers
- Salt and pepper to taste
Pink & Green Egg Salad (not for everyone)
- 4 hard cooked eggs, chopped
- 1 Tbsp of red bell pepper, finely chopped
- 1 Tbsp of sweet pickle relish
- 1 Tbsp scallion finely chopped, white and light green parts only.
- 1 ½ Tbsp of Mayo mixed with ½ Tbsp of ketchup
- Mix it all together well and serve on sandwich bread.
- 4 hard cooked eggs, chopped
- 4 slices of crisp cooked bacon crumbled (I use uncured turkey bacon)
- 2 Tbsp of mayo
- Salt and pepper to taste
