Egg Salad

So many people, kids included love eggs.  They are great in all ways.  Here are some creative egg salad combinations for you to try with your family.  Remember, you can put any of these egg salads on bread, rolls, pita or in wraps.  All these recipes make enough for 3 hearty sandwiches.  You can double as needed.  Enjoy!

Confetti Egg Salad Sandwiches
Ingredients:

  • 4 hard-cooked eggs, chopped
  • 1/2 cup shredded carrots, about 2 carrots
  • 1/2 cup chopped celery, about 2 celery stalks
  • 1/4 cup chopped green onions with tops, about 2 scallions
  • 1/4 cup creamy French dressing, reduce fat is okay.
  • 3 slices tomato
  • 6 thin slices cucumber
  • 3 Lettuce leaves
  • Sandwich bread, rolls or tortillas to make the sandwich/wrap
Directions:
  1. In medium bowl, stir together eggs, carrots, celery, onions and dressing until well combined.
  2. To make the sandwiches/wraps, scoop one third of the egg mixture onto the bread, roll or wrap and top with a lettuce leaf, a slice of tomato and 2 slices of cucumber. Top with the other piece of bread or roll like a burrito.
Tip: If using a roll, scoop out some of the bread from the top of the roll so that the sandwich fits together better.

Other Egg Salad Combinations: Use the basic steps in the first recipe throughout.

Green Eggs and Ham

  • 4 hard cooked eggs, chopped
  • 2 Tbsp of Mayo
  • 1 tsp of Dijon mustard
  • 1 Tbsp dried dill
  • Salt and pepper to taste
  • 3 slices of uncured ham
Mix the eggs with the mayo and mustard and season to taste. Make the sandwich by scooping one third of the egg mixture on to the bread and top with a piece of ham.

Ole Egg Salad
  • 4 hard cooked eggs, chopped
  • 2 Tbsp of mayo
  • 2 Tbsp of canned, roasted green chili peppers, finely chopped
  • 2 Tbsp green onions, finely chopped (optional)
  • 3 slices of tomato
  • Shredded lettuce
  • Slices of avocado
  • 3 Tortilla wraps
Combine the eggs, mayo, chilies and onions together well. Scoop on third of the mixture on to each wrap and top with a slice of tomato and some shredded lettuce. Roll like a burrito.

Mediterranean Egg Salad
  • 4 hard cooked eggs, chopped
  • 2 Tbsp of mayo
  • 1 heaping Tbsp of chopped olives (black or green, you choice)
  • 1 heaping Tbsp each of finely chopped celery and cucumbers
  • Salt and pepper to taste
Mix it all together well and season to taste. Serving suggestion, put into a pita with tomatoes and lettuce.

Pink & Green Egg Salad (not for everyone)
  • 4 hard cooked eggs, chopped
  • 1 Tbsp of red bell pepper, finely chopped
  • 1 Tbsp of sweet pickle relish
  • 1 Tbsp scallion finely chopped, white and light green parts only.
  • 1 ½ Tbsp of Mayo mixed with ½ Tbsp of ketchup
  • Mix it all together well and serve on sandwich bread.
Breakfast for Lunch Egg Salad
  • 4 hard cooked eggs, chopped
  • 4 slices of crisp cooked bacon crumbled (I use uncured turkey bacon)
  • 2 Tbsp of mayo
  • Salt and pepper to taste
Mix it all together well and serve on soft rolls.

The Swiss Alps
  • 4 hard cooked eggs, chopped
  • 2 tsp. sweet pickle relish
  • 2 Tbsp. mayo
  • Salt and pepper to taste
  • 3 slices of Swiss cheese
  • 3 slices of tomato
  • Pumpernickel sandwich bread
Combine the eggs, relish, and mayo and season to taste. Scoop one third of the mixture onto the bread and top with Swiss cheese and tomato. Yum!

Your Basic Egg Salad
  • 4 hard cooked eggs, chopped
  • 2 Tbsp. Mayo
  • 1 tsp dried mustard
  • 1 Tbsp fresh tarragon, finely chopped
  • 1 stalk of celery, finely chopped
Mix all together well and serve on bread, crackers or in a wrap with tomato and lettuce.
