Chopped Chicken Lettuce Wraps

Note/Suggestion: If your child does not like to eat salad yet, this might just be the ticket to get him or her hooked on lettuce. Makes 6 wraps.

Ingredients:

  • ¼ cup hoisin sauce
  • ¼ cup cold water
  • 2 cups of cooked chicken, chopped finely
  • 2 stalks of celery, chopped finely
  • ½ small white onions chopped finely
  • 6 large iceberg lettuce leaves (the outside leaves that are softer)

Directions:

  1. In a large bowl, combine the hoisin sauce and water and mix well.
  2. Add the chicken, celery and onion and toss together until well combined.
  3. Lay the lettuce leaves out on a clean work surface and put about a ½ cup of the mixture each leaf. Roll the leaves like a burrito, careful not to tear them. Wrap in plastic wrap to send to school.
