Chopped Chicken Lettuce Wraps
Note/Suggestion: If your child does not like to eat salad yet, this might just be the ticket to get him or her hooked on lettuce. Makes 6 wraps.Ingredients:
- ¼ cup hoisin sauce
- ¼ cup cold water
- 2 cups of cooked chicken, chopped finely
- 2 stalks of celery, chopped finely
- ½ small white onions chopped finely
- 6 large iceberg lettuce leaves (the outside leaves that are softer)
Directions:
- In a large bowl, combine the hoisin sauce and water and mix well.
- Add the chicken, celery and onion and toss together until well combined.
- Lay the lettuce leaves out on a clean work surface and put about a ½ cup of the mixture each leaf. Roll the leaves like a burrito, careful not to tear them. Wrap in plastic wrap to send to school.
