Chicken Souvlaki Sandwich

Note/Suggestions: This is a take on the flavors of a traditional Greek dish. If your family likes kalamata olives and picked vegetables, serve on the side. Makes 4 sandwiches.

Ingredients:

  • ¼ cup plain yogurt
  • ¼ cup mayonnaise
  • 1 tsp dried oregano
  • ¼ tsp of ground cumin
  • Salt and ground black pepper
  • 2 cups of cooked chicken, sliced
  • 4 slices of tomato
  • 4 leaves of lettuce (optional)
  • ½ of a cucumber, sliced
  • 4 multi-grain rolls or buns

Directions:

  1. In a small bowl, combine the yogurt, mayo and the spices. Mix well. Season to taste.
  2. On the one half of each roll, spread ¼ of the yogurt mixture.
  3. Layer the chicken, tomato, cucumber and lettuce on each sandwich and wrap in parchment paper or plastic wrap.
