Chicken Caesar Salad Wrap

Note/Suggestion: The easiest way to do this is with a good quality bottled Casaer salad dressing. However if you would like to make one from scratch, here is a really easy shortcut way of doing it.
Makes 4 wraps

Ingredients:

  • 2 cups of cooked chicken, shredded
  • 2 cups of romaine lettuce, chopped
  • 1 cup of grape tomatoes, cut in half if too big
  • 1/2 cup caesar salad dressing
  • 4 flour or multigrain tortillas

Directions:

  1. Toss all salad ingredients together well in a large bowl.
  2. Take about 1 cup (or 1/4 of the mixture) and place in the center of a tortilla.
  3. Take the side closest to you and fold it over the salad. Fold both sides in to the center.
  4. Roll the whole thing away from you closing up the tortilla.
  5. Wrap in parchement paper and cut in half. Wrap again in more parchment paper or plastic wrap.

Caesar Salad Dressing

Makes a little over 1 cup.

Ingrdients:

  • 3/4 cup of mayo
  • 2 T of white wine vinegar
  • 1/4 cup of olive oil
  • 1 tsp of garlic paste (2 cloves of garlic, minced)
  • 1/2 tsp of anchovie paste (YES, use it,and more if you want)
  • 1/4 cup of grated Parmesan cheese

Directions:

  1. In a blender, mix all the ingredients until they thicken and are very smooth.
