Chicken Caesar Salad Wrap
Note/Suggestion: The easiest way to do this is with a good quality bottled Casaer salad dressing. However if you would like to make one from scratch, here is a really easy shortcut way of doing it.Makes 4 wraps
Ingredients:
- 2 cups of cooked chicken, shredded
- 2 cups of romaine lettuce, chopped
- 1 cup of grape tomatoes, cut in half if too big
- 1/2 cup caesar salad dressing
- 4 flour or multigrain tortillas
Directions:
- Toss all salad ingredients together well in a large bowl.
- Take about 1 cup (or 1/4 of the mixture) and place in the center of a tortilla.
- Take the side closest to you and fold it over the salad. Fold both sides in to the center.
- Roll the whole thing away from you closing up the tortilla.
- Wrap in parchement paper and cut in half. Wrap again in more parchment paper or plastic wrap.
Caesar Salad Dressing
Makes a little over 1 cup.Ingrdients:
- 3/4 cup of mayo
- 2 T of white wine vinegar
- 1/4 cup of olive oil
- 1 tsp of garlic paste (2 cloves of garlic, minced)
- 1/2 tsp of anchovie paste (YES, use it,and more if you want)
- 1/4 cup of grated Parmesan cheese
Directions:
- In a blender, mix all the ingredients until they thicken and are very smooth.
