California Club Wrap
Note/Suggestions: Cooked bacon lasts in the fridge for a few days. You can also get the pre-cooked bacon slices in the grocer section.Makes 4 wraps.
Ingredients:
- 2 cups of cooked chicken, shredded
- 4 slices of cooked bacon
- 1 cup of shredded lettuce
- 4 slices of tomatoes cut in half
- 1 avocado cut into slices
- about 4 Tbsp of ranch dressing
- 4 multigrain or flour tortillas, burrito size
Directions:
- Spread about 1 Tbsp of ranch dressing on each tortilla
- On the first third of the tortilla spread 1/4 cup of lettuce, two pieces of tomato, one slice of bacon and about 2-3 slices of avocado.
- Fold the side of the torilla closest to yourself over the filling. Fold the two sides in tightly, but be gentle not to tear the tortilla.
- Now roll the whole thing away from you, closing up the torilla.
- Wrap the wrap in parchment paper and tape close. When your child eats it, instruct them to only open one side of the paper and eat, tearing off more paper as they go.
Tip: This tip I learned while watching Alton Brown on the Food Network, and it works every time. When cooking bacon, start with a cookie sheet and a wire rack placed into the cookie sheet. Usually a cooling rack will work well. Now lay the pieces of bacon over the wire rack in a manner that they won't fall through. Put the cookie sheet into a cold oven. set the oven for 400 degrees. The fat will slowly render off the bacon and the bacon will not burn in the fat on the sheet. You end up with crispy bacon.
You can also do this in the toaster over with 8 or so pieces of bacon. The time to cook can be 20-30 minutes depending on how much bacon you are cooking. Just keep watch.
