Your Basic Tabbouleh
Note/Suggestion: This is a versatile dish that you can add chicken, tuna or shrimp to.Serve it as a side dish or as a vegetarian main dish.
Makes 6-8 servings
Ingredients:
- 3/4 bulgur wheat
- 2 large bunches of flat leaf parsley
- 1 small bunch of mint
- 4 scallions finely chopped, white and light green parts only
- 1 cup grape tomatoes cut in half (or quarters if very large)
- 2 cloves of garlic, grated or minced
- 3 Tbsp lemon juice
- 2 Tbsp olive oil
- Salt and ground black pepper to taste.
Directions:
- Put bulgur wheat in a large bowl and pour 3 1/4 cups boiling water over the top. Let stand for 15-20 minutes or until all the water is absorbed.
- Finely chop the parsley and mint.
- In another large bowl, whisk together the olive oil, garlic and lemon juice.
- Add the wheat, herbs and vegetables to the dressing and mix well.
- Season with salt and ground black pepper to taste
