Your Basic Tabbouleh

Note/Suggestion: This is a versatile dish that you can add chicken, tuna or shrimp to.
Serve it as a side dish or as a vegetarian main dish.
Makes 6-8 servings

Ingredients:

  • 3/4 bulgur wheat
  • 2 large bunches of flat leaf parsley
  • 1 small bunch of mint
  • 4 scallions finely chopped, white and light green parts only
  • 1 cup grape tomatoes cut in half (or quarters if very large)
  • 2 cloves of garlic, grated or minced
  • 3 Tbsp lemon juice
  • 2 Tbsp olive oil
  • Salt and ground black pepper to taste.

Directions:

  1. Put bulgur wheat in a large bowl and pour 3 1/4 cups boiling water over the top. Let stand for 15-20 minutes or until all the water is absorbed.
  2. Finely chop the parsley and mint.
  3. In another large bowl, whisk together the olive oil, garlic and lemon juice.
  4. Add the wheat, herbs and vegetables to the dressing and mix well.
  5. Season with salt and ground black pepper to taste
