Tuna and Chickpeas
Tuna and Garbanzo Bean Salad with Crackers
from reader Elise KjosMy kids like this as an alternative to tuna sandwiches and I like the fiber and diversity of nutrients.
Makes 4 adult servings, or 6 kid sevrings
Ingredients:
- 1 15 oz can garbanzo beans, drained and rinsed (also called chickpeas)
- 1 6 oz can unsalted tuna, your choice, drained
- 1 shallot or 1/4 small onion, finely chopped
- 2 -3 tablespoons olive oil
- juice of 1/2 lemon
- finely chopped fresh herbs, parsley, basil, chives work nicely together or individually
- salt and pepper to taste
Directions:
- Mix all the ingredients into a large bowl. Chill salad before serving or packing up in a lunchbox.
- Serve with a side of whole grain crackers.
