Tuna and Chickpeas

Tuna and Garbanzo Bean Salad with Crackers

My kids like this as an alternative to tuna sandwiches and I like the fiber and diversity of nutrients.
Makes 4 adult servings, or 6 kid sevrings

Ingredients:

  • 1 15 oz can garbanzo beans, drained and rinsed (also called chickpeas)
  • 1 6 oz can unsalted tuna, your choice, drained
  • 1 shallot or 1/4 small onion, finely chopped
  • 2 -3 tablespoons olive oil
  • juice of 1/2 lemon
  • finely chopped fresh herbs, parsley, basil, chives work nicely together or individually
  • salt and pepper to taste

Directions:

  1. Mix all the ingredients into a large bowl. Chill salad before serving or packing up in a lunchbox.
  2. Serve with a side of whole grain crackers.
