Napa Cabbage Cole Slaw

Note/Suggestion;  This is a nice change to the traditional slaw we normally see at picnics and BBQ’s. Makes enough for 12 - 16 side servings.

Salad Ingredients:

  • ½ head of Napa cabbage
  • ¼ head of red cabbage
  • 1 celery root bulb (Celeriac)
  • 3 carrots
  • 6-8 chive flowers (optional)
Directions:
  1. Cut the Napa cabbage in half and remove the hard center core. Using a sharp knife, start and the base or crunchiest part of the cabbage and cut the Napa cabbage into thin ribbons. Do the same to the red cabbage.
  2. Cut the brown skin off the celeriac blub and cut into fine match sticks or shred. Peel the carrots and cut them into fine match sticks or shred them too. If you have a food processor, use the very thin julienne disk for this step.
  3. Combine the vegetables in a big bowl.
Dressing Ingredients:
  • ¾ cup good quality mayonnaise
  • 2 Tbsp vegetable oil
  • 2 Tbsp white wine vinegar
  • 2 Tbsp honey
  • 1 Tbsp poppy seeds
  • 1 tsp ground mustard seeds
  • Salt and pepper to taste
Directions:
Whisk all the ingredients together and season to taste with salt and pepper. Pour dressing over vegetables and toss well. Break apart the chive flowers and sprinkle into bowl.
