Island Chicken Kebobs
Note/Suggestions: The first time I made this I didn't give my 7-year-old enough to eat. So use your best judgement on how many skewers you think your child can eat. For smaller children (3-6), two skewers should be enough. For older children, 7-11, make three, and for 11+, 3-4 skewers should be enough.Pack a nonfat, light yogurt of choice and a bottle of water and something crunchy like popcorn, pretzels or baked chip and you have a meal.
Ingredients:
- cooked chicken cut into bite size cubes. (about 3 pieces per kebob)
- pineappple chucks in own juices (about 2-3 pieces per kebob)
- bell pepper cut into chucks (any color you have will due) (2 pieces per kebob)
- cherry or grape tomatoes (any color) (1-2 per kebob)
- grapes or other fruit you have on hand (strawberries, mangos, kiwi, ect) (1-2 pieces per kebob)
- Monterey Jack cheese, cut into bite size cubes, optional (about 1-2 per skewer)
Directions:
- Using medium-sized skewers or lollypop sticks (both available at supermarkets), thread the chicken, fruits and vegetables alternating them to make easy to eat Island Chicken Kebobs.
- Pack in a rectangular reusable conatainer with a lid.
