Curry Chicken Salad

Note/Suggestion: I usually do this recipe with almonds and raisins. However it is also good with mango chunks and cashews or pineapple chunks and walnuts.
Makes 4 servings.

Ingredients:

  • 2 cups cooked chicken, cubed
  • 1 stalk of celery, finely chopped
  • 1 scallion, finely chopped, white and light green parts only
  • 1/2 cup of raisins
  • 1/2 cup of slivered almonds
  • 1/4 cup of mayonaisse
  • 1/4 nonfat plain yogurt
  • 2 Tbsp of curry powder

Directions:

  1. In a medium bowl, combine the chicken, celery, scallion raisins and almonds.
  2. In a small bowl, whisk together the mayo, yogurt and curry powder.
  3. Mix the dressing into the chicken mixture.
  4. Serve with mixed greens on a plate or in a pita pocket.
