Curry Chicken Salad
Note/Suggestion: I usually do this recipe with almonds and raisins. However it is also good with mango chunks and cashews or pineapple chunks and walnuts.Makes 4 servings.
Ingredients:
- 2 cups cooked chicken, cubed
- 1 stalk of celery, finely chopped
- 1 scallion, finely chopped, white and light green parts only
- 1/2 cup of raisins
- 1/2 cup of slivered almonds
- 1/4 cup of mayonaisse
- 1/4 nonfat plain yogurt
- 2 Tbsp of curry powder
Directions:
- In a medium bowl, combine the chicken, celery, scallion raisins and almonds.
- In a small bowl, whisk together the mayo, yogurt and curry powder.
- Mix the dressing into the chicken mixture.
- Serve with mixed greens on a plate or in a pita pocket.
