Carrot and Celery Slaw

Ingredients:

  • 4 carrots grated or buy them already grated in a bag
  • 4 stalks of celery grated
  • Choice of Creamy Dill or Cucumber Yogurt Dips-2 Tbsp.
Mix it all together and put into a reusable container to send to school.

Dill Dip

Ingredients:

  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • ¼ cup plain yogurt
  • ¼ cup fresh dill, finely chopped
Mix all together and serve with fresh vegetables cut into bite sized pieces.

Cucumber Yogurt Dip

Ingredients:

  • 2 cup of cucumber, seeded and grated
  • 1 ½ cups of Greek Yogurt **
  • 2 Tbsp each, Dill, Mint and Chives, chopped finely
  • 1 Tbsp lemon juice
  • 2 cloves garlic, grated
  • Salt and pepper to taste.
Place the grated cucumber in a sieve lined with a paper towel and store in the fridge until needed.
In a medium bowl, mix together the remaining ingredients, cover and store in the fridge until ready to use. Just before serving, combine the cucumber with the yogurt mixture and season to taste with salt and pepper.
