Broccoli and Corn Salad

Note/Suggestions: This is a great way to use up leftover broccoli and corn on the cob from dinner. Use as much of the leftover vegetables as you want or have on hand, these are just estimates.

Ingredients:
  • 1 cup broccoli
  • 1 cup corn, cut from the cob
  • 1 red sweet bell pepper cut into small strips (optional)
  • ½ cup creamy cucumber dressing
Directions:
  1. Cut the florets off the broccoli heads and chop into bite size pieces. Using the shredding disc on the food processor or a box grater, shred the stems of the broccoli. (You can also cut them into match stick size too.
  2. Combine the broccoli, corn and red pepper with the dressing and season to taste with salt and pepper.
