Basil Lemon Chicken Salad

Notes/Suggestions:  This salad has such a nice bright and fresh taste.  Your family will love it.
Makes 4-6 servings

Ingredients:

  • 2 cups cooked chicken, cubed
  • 1 stalk of celery, finely chopped
  • 1/4 cup fresh basil leaves

     Dressing:

  • 1/4 cup nonfat plain yogurt, finely chopped
  • 1/4 cup mayonnaise
  • scant teaspoon lemon juice
  • sea and ground black pepper to taste
  • 1/4 cup slivered almonds, optional

Directions:

  1. In a small bowl, whisk together the mayo, yogurt and lemon juice.  Stir in the basil.
  2. In a medium bowl, combine the chicken and celery (and almonds if using).  Mix in the dressing.
  3. Serve with mixed greens or baby spinach on a plate or in a multigrain wrap.
