Basil Lemon Chicken Salad
Notes/Suggestions: This salad has such a nice bright and fresh taste. Your family will love it.Makes 4-6 servings
Ingredients:
- 2 cups cooked chicken, cubed
- 1 stalk of celery, finely chopped
- 1/4 cup fresh basil leaves
Dressing:
- 1/4 cup nonfat plain yogurt, finely chopped
- 1/4 cup mayonnaise
- scant teaspoon lemon juice
- sea and ground black pepper to taste
- 1/4 cup slivered almonds, optional
Directions:
- In a small bowl, whisk together the mayo, yogurt and lemon juice. Stir in the basil.
- In a medium bowl, combine the chicken and celery (and almonds if using). Mix in the dressing.
- Serve with mixed greens or baby spinach on a plate or in a multigrain wrap.
