Strawberry Coconut Milk Sorbet

Notes:  This is a great dairy free yet creamy dessert.  You can make pops out of it or freeze to scoop.

Ingredients:

  • 3 pints of strawberries (about 5 pounds)
  • Juice form 1 lemons
  • ¾ cup - 1 cup \honey
  • 2 cups unsweetened coconut milk
Directions:
  1. Soak the strawberries in cold water. Drain and rinse. Repeat 2-3 more times to remove any dirt and loose seeds.
  2. Remove the leaves and cut in half. Put into a large pot.
  3. Add the lemon juice, water and honey and bring the mixture to a boil. Reduce heat and let simmer for 1/2 hour.
  4. Remove from heat and let cool.
  5. Add the coconut milk and blend until smooth.
  6. Refrigerator the mixture until cold and put into ice cream maker and freeze according to manufacturer’s instructions.
