Strawberry Coconut Milk Sorbet
Notes: This is a great dairy free yet creamy dessert. You can make pops out of it or freeze to scoop.Ingredients:
- 3 pints of strawberries (about 5 pounds)
- Juice form 1 lemons
- ¾ cup - 1 cup \honey
- 2 cups unsweetened coconut milk
- Soak the strawberries in cold water. Drain and rinse. Repeat 2-3 more times to remove any dirt and loose seeds.
- Remove the leaves and cut in half. Put into a large pot.
- Add the lemon juice, water and honey and bring the mixture to a boil. Reduce heat and let simmer for 1/2 hour.
- Remove from heat and let cool.
- Add the coconut milk and blend until smooth.
- Refrigerator the mixture until cold and put into ice cream maker and freeze according to manufacturer’s instructions.
