Fruit and Museli Slices

Makes 16 slices

Ingredients:

  • 1 cup dried apricots or any other favorite dried fruit(s)
  • 2 medium apples, cored and grated with skin on
  • 2 ½ cups cup Swiss style Muesli or Rolled Oats
  • 1 1/3 cup of 100% apple juice (no sugar added)
  • 2 Tbls butter, softened but not melted

Directions:

  1. Mix all ingredients together until well incorporated.
  2. Prepare two 8 inch nonstick cake pans with a piece of parchment paper to fit in the bottom of each pan.
  3. Divide the mixture evenly and press into the pans.
  4. Bake for 35-40 minutes or until it is lightly browned and firm to the touch.
  5. Once out of the oven, score the top of the muesli as if you were cutting it into 8 wedges.
  6. Let cool in the pan. Remove and break along the scored lines.
