Stuffed Baked Potatoes
Note/Suggestions: Recently at my children’s swim meet I noticed people walking around with baked potatoes from a snack bar. Intrigued, I asked how they were preparing them…the microwave they said.Ingredients:
- 2 large baked potatoes, cooked
- 1 cup of cooked chicken, shredded
- 1 cup of cheese or your choice, shredded plus more to sprinkle on top
- 1 cup of broccoli, chopped (it comes in a bag, frozen for your convenience)
- 2 tbs olive oil
- 1 tsp garlic powder
- 2 tbs of dried onion
- Salt and ground black pepper, to taste
Directions:
- Cut the baked potatoes in half and scoop out some of the potato, leaving about ¼ inch all around the skin.
- Put the potato in a medium sized bowl and add the chicken, cheese and broccoli. Stir together with the olive oil, garlic powder and dried onion. Season with salt and pepper to taste.
- Scoop the chicken mixture back into the baked potato shells.
- To heat and serve: This mixture can be put into a microwavable resealable bowl and sent to school and heated there; or you can microwave it until it is super hot at home and put it into an insulated bowl so it is ready to eat at lunch time.
