Quick Split Pea Soup

Note/Suggestion:  You can have hearty spit pea soup within hours using this recipe, just remember to soak the peas over night.  Replace the Polish sausage with any other smoked meat you like and for a different look, use yellow split peas.

Ingredients:
  • 1 lb. dry green split peas
  • 1 lb. Polish sausage (more if you like meaty soup)
  • 1 qt. water
  • 1 med. white onion, chopped
  • 2 carrots, chopped into 1/8 inch thick pieces
Directions:
  1. Soak split peas in water overnight.
  2. Place in crock pot with fresh water (you may need to add more later if soup becomes too thick).
  3. Cut Polish sausage into pieces approximately 1/4 inch thick.
  4. Add onions and carrots and cook on high for 3 to 5 hours.
  5. Salt and pepper to taste.
Tip:  You could also do this on the stove top.  Bring all the ingredients to a boil, cover and reduce heat to low and cook for about 3 hours.
