Lonestar Chili

Ingredients:
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 green bell pepper, seeded & chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups canned crushed tomatoes
  • 1/2 cup water
  • 2 Tbsp, jalapeno peppers, finely chopped
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp dried oregano
  • 1 (19 oz. can) chili beans
To Serve:
  • Tortilla Chips
  • Shredded cheddar
  • Sour Cream
  • Red Bell Peppers, seeded and chopped
Directions:
  1. Heat the oil in a large skillet over medium heat. Add beef and cook, breaking up large bits as the meat browns.
  2. Add the green bell pepper, onion, and garlic. Cook stirring, until the onion is translucent, about 3-5 min.
  3. Stir in tomatoes, water, jalapeno peppers, chili powder, cumin, salt and oregano. Bring to a boil, then reduce to a simmer. Covered and cook for about 30-45 minutes.
  4. Stir in beans and cook until heated through about 5 minutes.
  5. Serve in bowls with tortilla chips, cheese, sour cream and red bell pepper on the side.
