Lonestar Chili
Ingredients:- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 green bell pepper, seeded & chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups canned crushed tomatoes
- 1/2 cup water
- 2 Tbsp, jalapeno peppers, finely chopped
- 1 Tbsp chili powder
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp dried oregano
- 1 (19 oz. can) chili beans
- Tortilla Chips
- Shredded cheddar
- Sour Cream
- Red Bell Peppers, seeded and chopped
- Heat the oil in a large skillet over medium heat. Add beef and cook, breaking up large bits as the meat browns.
- Add the green bell pepper, onion, and garlic. Cook stirring, until the onion is translucent, about 3-5 min.
- Stir in tomatoes, water, jalapeno peppers, chili powder, cumin, salt and oregano. Bring to a boil, then reduce to a simmer. Covered and cook for about 30-45 minutes.
- Stir in beans and cook until heated through about 5 minutes.
- Serve in bowls with tortilla chips, cheese, sour cream and red bell pepper on the side.
