Crockpot Chicken Cacciatore

Note/suggestions:  I like to use chicken thighs and legs for this recipe with the bone and the skin on. I brown the chicken first to both render the fat and give the chicken a pleasant look and mouth feel. You can also boneless skinless chicken cut into bite sized pieces as well.

Ingredients:

  • 1 large onion, thinly sliced
  • 2 large bell peppers, thinly sliced
  • ½ pound sliced mushrooms (optional)
  • 2.5-3 lbs of chicken
  • 2 6 oz cans tomato paste
  • 1 tsp salt
  • 1/4 cup dry white wine
  • 1/4 tsp pepper
  • 1-2 garlic cloves, minced
  • 1-2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp celery seed
  • 1 bay leaf
Directions:
  1. Slice Onions and Peppers and place in the bottom of the slow cooker.
  2. Place the chicken on top.
  3. In a medium sized bowl, mix together the remaining ingredients and pour over the chicken.
  4. Cook for 8-10 hours on low.
  5. Serve over pasta or rice.
