Crockpot Chicken Cacciatore
Note/suggestions: I like to use chicken thighs and legs for this recipe with the bone and the skin on. I brown the chicken first to both render the fat and give the chicken a pleasant look and mouth feel. You can also boneless skinless chicken cut into bite sized pieces as well.Ingredients:
- 1 large onion, thinly sliced
- 2 large bell peppers, thinly sliced
- ½ pound sliced mushrooms (optional)
- 2.5-3 lbs of chicken
- 2 6 oz cans tomato paste
- 1 tsp salt
- 1/4 cup dry white wine
- 1/4 tsp pepper
- 1-2 garlic cloves, minced
- 1-2 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp celery seed
- 1 bay leaf
- Slice Onions and Peppers and place in the bottom of the slow cooker.
- Place the chicken on top.
- In a medium sized bowl, mix together the remaining ingredients and pour over the chicken.
- Cook for 8-10 hours on low.
- Serve over pasta or rice.
