Big Batch of Party Chili
Notes/Suggestions: This will make enough Chili to feed upt to 30 very hunger students. Serve out of a CrockPot so that it stays hot throughout the party.Ingredients:
- ½ cup olive oil
- 3 cups chopped onion (about 6 medium sized onions)
- 9 cloves of garlic minced
- 9 pounds of ground meat (turkey, beef, pork or any combination of the three)
- ¾ cup really good quality chili powder
- 4 Tbsp of ground cumin
- 2 Tbsp dried oregano
- 4 tsp ground coriander
- ½ tsp cayenne pepper (more if you want it hotter)
- Juice and zest from one lime
- 3 large cans (28 ounces) of crushed plum tomatoes, with the juices
- 6 cups of beans, drained and rinsed well (black beans, pinto beans, white beans, kidney beans or any combination of beans you like.)
- Salt and pepper to taste
- Condiments:
- shredded cheese, sour cream, cubed avocado, chopped fresh cilantro, lime wedges, hot sauce, and tortilla chips.
Directions:
- In a large Dutch oven or other heavy bottomed large pot, heat the oil on medium heat. Add the onions and sauté until translucent, about 5-7 minutes. Add the garlic and cook for a minute or two more, and then add the meat.
- Cook the meat until it is no longer pink inside. Break up the chucks and stir constantly so that the meat does not burn.
- Add all the spices and lime zest and juice; stir to combine well.
- Add the crushed tomatoes with their juices and bring to a boil. Reduce the heat to simmer and cover. Let cook for about 1 hour undisturbed.
- Stir in the beans and continue to cook until the beans are cooked through and tender. About 10- 15 minutes more.
- Serve with assorted condiments.
