Penne with Broccoli and Chicken

Note/Suggestions:  If you do not have cooked chicken to use,  saute some boneless skinless chicken breasts of thighs with the onions and garlic. Makes six servings.

Ingredients:

  • 1 16 oz box of penne
  • 2 Tbsp olive oil
  • 2 cups broccoli florets cut to bite sized pieces
  • 4 cloves of garlic, minced
  • 1 medium onion, chopped
  • 2 cups cooked chicken, chopped
  • 2 Tbsp fresh rosemary, chopped
  • Salt and pepper to taste
  • Grated Parmesan to taste

Directions:

  1. Cook the penne according to the instructions on the box.
  2. In a sauté pan, heat the oil and sauté the onion until starting to turn golden. Add the garlic and broccoli and cook until the broccoli is tender, but not mushy. Add a ¼ cup of water to the pan if you find the garlic starting to burn.
  3. Add the chopped chicken and rosemary and stir well to incorporate.
  4. Toss with the penne and season to taste with salt and pepper.
  5. Serve with Parmesan cheese.
