Penne with Broccoli and Chicken
Note/Suggestions: If you do not have cooked chicken to use, saute some boneless skinless chicken breasts of thighs with the onions and garlic. Makes six servings.
Ingredients:
- 1 16 oz box of penne
- 2 Tbsp olive oil
- 2 cups broccoli florets cut to bite sized pieces
- 4 cloves of garlic, minced
- 1 medium onion, chopped
- 2 cups cooked chicken, chopped
- 2 Tbsp fresh rosemary, chopped
- Salt and pepper to taste
- Grated Parmesan to taste
Directions:
- Cook the penne according to the instructions on the box.
- In a sauté pan, heat the oil and sauté the onion until starting to turn golden. Add the garlic and broccoli and cook until the broccoli is tender, but not mushy. Add a ¼ cup of water to the pan if you find the garlic starting to burn.
- Add the chopped chicken and rosemary and stir well to incorporate.
- Toss with the penne and season to taste with salt and pepper.
- Serve with Parmesan cheese.
