Meatballs

Notes/Suggestions: Meatballs have a ratio of 1:1:1 plus flavor--one pound of meat, one cup of bread crumbs and one egg. The rest of each recipe is flavoring.

Ingredients:

  • 3 lbs ground beef or turkey
  • 3 cups of bread crumbs
  • 3 eggs, slightly beaten
  • ½ cup of chopped parsley
  • ¼ cup dried onions
  • 1 tsp garlic powder
  • ¼ cup tomato sauce (or ketchup)

Directions:

  1. Put everything in a standing mixer fitted with a paddle. Beat on low until all the ingredients are well incorporated, but do not over work the meat or it will get gummy.
  2. Pre-heat the oven 350 degrees.
  3. Shape the meat mixture into ½ inch balls using your hands or a melon ball-er.
  4. Place the meatballs on a cookie sheet lined with parchment paper. Bake for 15 minutes.
  5. Let cool and put into a freezer bag and pop into the freezer.
Uses:
  • Reheat in the microwave and put into an insulated container for lunch at school. Serve with ketchup, cheese and bread and cold carrots and olives for a complete meal.
  • Use in the Ravioli Recipe
  • Reheat in tomato sauce and pour over pasta
  • Make meatball sandwiches on rolls with tomato sauce and cheese.
