Pineapple-Chile Salsa
Ingredients:- 1 14 oz can of pineapple chunks in their own juices (or ½ fresh pineapple)
- 2 fresh red chilies
- 1 shallot
- 1 large bunch of fresh cilantro leaves
- Juice from one lime
- ½ tsp sea salt
- Drain then chop the pineapple chunks into a smaller dice.
- Remove the core and ribs of the chili pepper and finely chop it.
- Finely chop the shallot, and the cilantro.
- Combine all ingredients with the lime juice and salt to taste. Serve with grilled fish or chicken.
