Pineapple-Chile Salsa

Ingredients:
  • 1 14 oz can of pineapple chunks in their own juices (or ½ fresh pineapple)
  • 2 fresh red chilies
  • 1 shallot
  • 1 large bunch of fresh cilantro leaves
  • Juice from one lime
  • ½ tsp sea salt
Directions:
  1. Drain then chop the pineapple chunks into a smaller dice.
  2. Remove the core and ribs of the chili pepper and finely chop it.
  3. Finely chop the shallot, and the cilantro.
  4. Combine all ingredients with the lime juice and salt to taste. Serve with grilled fish or chicken.
