Peach-Raspbery Salsa
Note/Suggestion: This is a refreshing salsa for fish or chicken as well as on sandwiches. If you cannot find fresh peaches, substitute nectarines for all or some of the peaches or use canned peaches in natural juices.
Ingredients:
- 1/3 cup orange juice
- 1 1/2 teaspoons balsamic vinegar
- 3 peach, peeled and cut into small cubes
- 2 teaspoons fresh, chopped mint
- 2 cups fresh raspberries, rinsed and drained
Directions:
- Whisk together the juice and vinegar.
- Stir in the peaches and mint.
- Gentley add the raspberries.
- Chill for one hour before serving.
