Meatloaf
Notes/Suggestions: Meatloaf can be made with almost any ground meat. It is one of the world’s best comfort foods. Here we are making it out of beef. But you can substitute turkey, or combine the beef with pork or veal or both. This is a great recipe to let the kids help with. Make sure they wash hands well before and after.Ingredients:
- 3 pounds of lean ground beef
- 1 cup bread crumbs
- 1 egg, slightly beaten
- ½ cup dried onions
- ½ teaspoon garlic powder
- 1 cup of tomato sauce (1 8 oz can)
- 1 tsp salt
- 1 tsp ground black pepper
- 4 strips bacon
- ¼ cup ketchup
Directions:
- Preheat the oven to 350 degrees and spray the inside of a loaf pan with cooking spray.
- In a large bowl, put the meat and next 7 ingredients up to black pepper, and mix together well using your hands.
- Dump the meat mixture into the loaf pan and spread evenly.
- Spread the ketchup over the top of the meatloaf and lay the strips of bacon across the loaf pan, careful not to have them hang over the sides. Cut them if necessary.
- Cook for 45 minutes or until the internal temperature of the loaf is 160 degrees.
- Let rest for 10 minutes before serving.
- If making a turkey meatloaf, add a ¼ cup of chopped bell pepper to the mixture. Also use turkey bacon on top and cook until the internal temperature is 165 degrees.
- If you do not have a loaf pan, put the meat mixture onto a baking sheet lined with parchment paper and shape it into a domed shaped oval.
