Strawberry Almond Parfait
Ingredients:
- ½ cup cottage cheese
- ¼ cup low fat plain yogurt
- ¼ cup honey
- 1/2 teaspoon vanilla or almond extract
- 1 cup fresh strawberries*
- ½ cup fresh raspberries*
- ½ cup fresh blueberries*
- ¼ cup sliced or chopped roasted almonds
Equipment:
- Food Processor
- Sieve with coffee filter or cheesecloth
Directions:
- In a food processor, process cottage cheese and yogurt until smooth. Transfer to a sieve lined with a coffee filter or cheese cloth and cover with plastic wrap. Refrigerate for 8 hours or overnight until firm.
- Transfer cottage cheese mixture to a bowl and gently fold in the honey and the extract.
- To serve: In a plastic container with a tight fitting lid, put a layer the cheese mixture, top with the berries and then the almonds.
- Repeat ending with almonds on top.
- Cover with lid and put into a lunchbox with a spoon and an ice pack. Great snack.
