Strawberry Almond Parfait

Ingredients:

  • ½ cup cottage cheese
  • ¼ cup low fat plain yogurt
  • ¼ cup honey
  • 1/2 teaspoon vanilla or almond extract
  • 1 cup fresh strawberries*
  • ½ cup fresh raspberries*
  • ½ cup fresh blueberries*
  • ¼ cup sliced or chopped roasted almonds

Equipment:

  • Food Processor
  • Sieve with coffee filter or cheesecloth

Directions:

  1. In a food processor, process cottage cheese and yogurt until smooth. Transfer to a sieve lined with a coffee filter or cheese cloth and cover with plastic wrap. Refrigerate for 8 hours or overnight until firm.
  2. Transfer cottage cheese mixture to a bowl and gently fold in the honey and the extract.
  3. To serve: In a plastic container with a tight fitting lid, put a layer the cheese mixture, top with the berries and then the almonds.
  4. Repeat ending with almonds on top.
  5. Cover with lid and put into a lunchbox with a spoon and an ice pack. Great snack.
*Tip:  When berries are not in season, use berries that have been flash frozen, not in sugary syrup.
