Berry Breakfast Roll Up
Note/Suggestions: This is not just a great and quick breakfast item, but a great snack item as well. This will make about 4 servings.Ingredients
- 1/2 cup low-fat cottage cheese
- 2 tablespoons brown sugar
- 1/2 teaspoon ground apple pie spice
- 2 cups blackberries, washed and drained (any berry will do)
- 4 burrito size multigrain or flour tortillas
Directions
- Combine cottage cheese with sugar and cinnamon and mix well.
- Heat the tortillas until they are warm and easy to use.
- Put a 1/8 cup of the cottage cheese mixture on the first third of the tortilla and a 1/4 cup of berries.
- Fold the sides of the tortilla inwards and roll the tortilla up and over the berry and cheese mixture. Continue to roll the tortilla until the end.
- Melt the cheese in the toaster oven or microwave, or serve room temperature.
