Turkey Cobb Burger

Make your favorite turkey burger recipe or pick up a premade frozen turkey burger package at the store. Cook to desired doneness, basically, don’t eat it raw!

Now how to dress it: Stack and assemble then repeat per burger.
  • 1 Multi-grain hamburger bun, soft and warm.
  • 2-3 strips of cooked bacon
  • 1 portion of sliced or crumbled bleu cheese
  • 1 Lettuce leaf (I like red leaf or butter)
  • 1 slice of ripe tomato (Use yellow tomatoes for a great look on the plate)
  • 1 slice red onion
  • 1 – 2 Tbsp. Avocado Mayo (see recipe below)
Avocado Mayo
Makes 1 ½ cups of mayo.

Ingredients:
  • ½ Haas Avocado
  • 1 egg
  • 1 egg yolk
  • 1 ½ Tbsp white vinegar
  • 1 clove garlic
  • ¼ tsp dried mustard
  • ½ tsp sea salt
  • ¼ tsp ground black pepper
  • 1 cup neutral vegetable oil ( I use Safflower or Canola oil)
Directions:
Put the avocado, egg, egg yolk, vinegar, garlic clove, dried mustard, salt and pepper in the jar of a blender and start the motor. Slowly pour the oil into the blender until the resulting solution is emulsified (thickened and combined well). Store in the refrigerator for up to 1 week.

Use this instead of regular mayo on sandwiches, chicken salad, tuna salad, dips, in salad dressings, etc. One of my favorite ways is to make a Cobb Chicken Salad: cubed cooked chicken, chopped cooked bacon, celery, red onion, crumbled blue cheese and Avocado Mayo. Mix and serve on a roll or over greens. Delish!
