Black Bean Burgers
Ingredients:- 2 (15 ounce) cans Black Beans, rinsed and drained
- 1/2 cup rolled oats
- 1/4 cup yellow cornmeal
- 1/2 cup chunky salsa
- 1 tsp ground cumin
- 1 tsp coriander
- 1 tsp salt
- 1 clove garlic
- Place beans in food processor; process until fairly smooth. Add remaining ingredients and process until well combined and smooth.
- Scoop mixture into 6 balls and refrigerate for at least an hour before cooking. You can make these up to 6 hours ahead of time and keep refrigerated.
- Heat the grill or grill pan over medium heat and coat with oil.
- Form each black bean ball into a patty about 4 inches wide and ½ inch high.
- Place the patties on the grill (or in pan) and cook until browned and heated through. Do not keep flipping the patties. Leave them alone for about 4 -5 minutes per side.
- Serve on hamburger buns with your favorite toppings like avocado, mayo, sour cream, tomatoes, onions, salsa, lettuce, cilantro leaves, etc. Be creative.
