Rice Pudding
Note/Suggestions: there are three different rice pudding recipes listed here, none use gelatin and all have a different taste and texture.Ingredients:
- 1 cup of short grained white rice
- 3 cups of whole milk
- 1 tsp apple pie spice
- ½ tsp salt
- ½ cup brown sugar
- 1 Tbsp butter
- 1 cup raisins or other dried fruit of choice
- 1 tsp vanilla
Directions:
- In a large sauce pan, combine the rice, milk, spice, salt and sugar. Heat to nearly boiling and then reduce the heat to a simmer and cover.
- Continue to simmer for about 30-45 minutes, stirring often so the mixture does not burn on the bottom. When the milk is almost all absorbed and the rice is sticky and pudding like.
- Add the butter, raisins and vanilla and stir well to combine. Serve warm or cold.
Rice Custard Pudding
Ingredients:
- 1/2 cup short grain white rice
- 1 1/2 cups boiling water
- 2 eggs
- 1/2 cup sugar
- 1/2 tsp. salt
- ½ tsp apple pie spice
- 2 cups milk
- 1/4 cup golden raisins
- 1 tsp vanilla
Directions:
- Soak the raisins in hot water while making the rest of the custard.
- Cook rice as per the packages instructions.
- Pre-heat oven to 325 degrees.
- In a medium large bowl, beat eggs, sugar, salt and milk. Stir in the rice, spices, raisins and vanilla.
- Transfer mixture to a buttered 1 quart ovenproof baking dish.
- Bake for 1-1 ½ hours. Serve warm.
Quick and Easy Healthy Dessert: Brown Rice Pudding
Take any amount of leftover cooked brown rice. Put it into a pot with enough milk or soy milk to just cover the rice. Heat until the milk has started to be absorbed into the rice and it has become a thick pudding like substance. Add cinnamon & other spices, dried fruit and honey.
