Oat Cookies

Notes/Suggestions:  This will make 12 large cookies that are just so good!

Ingredients:

  • 12 Tbsp butter
  • 1 ½ cups flour (I use a mix of unbleached all purpose flour and white wheat flour)
  • 3 tsp baking powder
  • 1 ½ cup brown sugar
  • 3 tsp vanilla
  • 6 Tbsp milk
  • 1 ½ cup oats

Directions:

  1. Preheat oven to 400 degrees
  2. In a food processor blend all the ingredient together except the oat. Add the oat then pulse to incorporate but not to puree the oats.
  3. Using an ice cream scooper, scoop out 12 equal sized balls onto a cookie sheet lined with parchment paper or a baking mat.
  4. Bake 7-10 minutes.  They should be fully spread out and just starting to turn golden but still soft in the middle.
