Hearty Yogurt Nut and Seed Bread

Ingredients:
  • 1 Tbls of vegetable oil
  • 2 cups all purpose unbleached flour
  • 1 ½ cups white wheat flour
  • 1 tsp salt
  • 1 tsp cream of tartar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¾ cup mixed chopped nuts of your choice
  • ¾ sunflower seeds, hulled (plus extra to sprinkle on top)
  • 3 Tbsp honey
  • 1 cup plain yogurt
  • 1 ¼ cup milk
Directions:
  1. Pre-heat the oven to 350 degrees and spray the bottom and sides of a loaf pan with cooking spray.
  2. In a large bowl whisk together the flours, salt, cream of tartar, baking soda and baking powder.
  3. In the bowl of a large standing mixer, fitted with a paddle, combine the milk, honey, yogurt and oil.
  4. Add the nuts and seeds and combine. Slowly add the flour mixture until a smooth soft dough forms.
  5. Pour the dough into the prepared loaf pan and smooth out so it is evenly distributed in the pan. Sprinkle the top with the extra sunflower seeds.
  6. Bake for one hour or until the bread is golden brown and the sides start coming away from the pan.
