Corn Bread
Note/Suggestions: You can use this same recipe for muffins. Add shredded cheese, chopped chili peppers, sausage or ham to the muffins or bread for a different taste.Ingredients:
- 1 cup fine cornmeal or masa
- 1 cup unbleached flour
- 2 tsp baking powder
- ½ tsp baking soda
- 1 Tbsp sugar
- 2 eggs beaten
- 2/3 cup buttermilk
- 2/3 cup milk
- 2 T butter melted, plus more for greasing the pan
Directions:
- Liberally grease the sides and bottom of a 9 inch square baking pan with melted butter and put into a 425 degree oven until very hot.
- In a large bowl whisk together the dry ingredients until they are well combined.
- In another bowl, whisk together the eggs and buttermilk and regular milk and melted butter.
- Make a well in the middle of the dry ingredients and pour the wet ingredients into it. Using a rubber spatula fold the ingredients together to form a wet batter, but do not over mix,
- Pour or spoon batter into hot pan and bake for 20-25 minutes until it has risen well, golden brown and the edges have come away from the pan’s edge.
- Remove from the pan and let cool on a rack. Cut into squares and serve with honey, butter, and chili.
