Berry Cobbler
Notes/Suggestions: You can use fresh or frozen berries of your choice in the this recipe. Strawberries are coming into season soon.Ingredients:
- 2 pints berries
- ¼ cup honey
- ½ tsp vanilla
- ½ tsp cinnamon or pumpkin pie spice or apple pie spice, whichever you have on hand.
- 12 Trefoils (or more to your liking)
- 2 Tbsp butter
- Butter the bottom and sides of a baking dish.
- Mix the berries with honey and vanilla and put into the buttered baking dish.
- Put the Trefoils into a large zip lock bag and crush into small pieces (this is a good job for the kids). Add the cinnamon and toss around in the SEALED bag)
- Pour the contents of the bag over the berries. Cut up the remaining butter and “dot” the top of the cobbler.
- Bake at 350 until bubbling, about 20-30 minutes.
